Your ear naturally locks onto the highest voice, so as long as the tune stays on the top one or two strings, everything below it simply reads as "warm harmony" rather than a competing melody.
Concrete takeaway: when you arrange any carol yourself, sing the melody first and find those exact notes on strings 1 and 2.
